Substitutions
• 2 potatoes, diced
• 1 carrot, diced
• 1 small leek or onion, chopped
• 1 liter vegetable stock
• 1 table spoon oil or butter
• A handful of fresh dill, chopped
• Salt and black pepper
• Butter: oil.
• Dill: parsley.
Allergens
Dairy (butter), if used
1. Heat oil or butter in a pot. Add leek or onion and cook until soft.
2. Add carrot and potatoes. Stir for 2 minutes.
3. Pour in vegetable stock. Bring to a boil, then simmer for 15–20 minutes until vegetables are tender.
4. Add chopped dill, salt, and black pepper to taste.
