Ingredients

Substitutions

• 500 grams potatoes (starchy variety, e.g. russets)
• 120 grams potato starch (about one-fourth of potato volume)
• 1 egg
• Pinch of salt

• Egg: can be omitted, just increase potato starch slightly.
• Potato starch: cornstarch (texture less authentic but workable).

1. Peel potatoes, boil until soft, and mash or press until smooth. Let cool slightly.
2. Measure the potato mass, then remove one-quarter of it. Replace that portion with potato starch.
3. Return all to the bowl, add the egg and a pinch of salt. Mix into smooth dough.
4. Roll dough into logs, cut into small pieces, and shape round dumplings.
5. Press a small indentation in the center of each (the signature Silesian look).
6. Cook in salted boiling water until they float (about 3 minutes). Remove with a slotted spoon.

How to make

Serving tip

Serve hot with beef roulades or rich gravies.
