Ingredients

Substitutions

• 500 milliliters milk (or plant milk)
• 60 grams semolina (fine wheat grits)
• 1 table spoon sugar or honey, to taste
• 200 grams frozen or fresh mixed berries
• 1 tea spoon lemon juice

• Milk: plant milk or half milk, half water.
• Semolina: fine cornmeal or rice semolina (gluten-free version).

1. In a pot, bring milk to a gentle simmer. Sprinkle in semolina while stirring to avoid lumps.
2. Cook on low heat for about 5 minutes, stirring, until thick and smooth. Sweeten to taste.
3. In a small pan, warm berries with lemon juice for 2–3 minutes until they release juices.
4. Serve porridge in bowls with warm berry compote on top.

How to make

Serving tip

Dust with a pinch of cinnamon or add a small spoon of sour cream.
