Ingredients
Substitutions
• 4 eggs
• 20 grams butter
• 1 small bunch fresh chives, finely chopped
• 2 slices rye bread
• 1 medium tomato, sliced
• Salt and black pepper
• Butter: oil.
• Rye bread: any bread you like, or boiled potatoes on the side.

1. Toast the rye bread. Arrange tomato slices on plates and sprinkle with a little salt.
2. Crack the eggs into a bowl, add a pinch of salt and black pepper, and whisk with a fork.
3. Melt butter in a non-stick pan on low heat. Pour in the eggs.
4. With a spatula, slowly move the eggs from the edges toward the center. Cook gently until creamy and just set (about 2–3 minutes).
5. Stir in most of the chives, taste, adjust salt. Serve on toast with remaining chives on top.
How to make
Serving tip
Add a small spoon of sour cream on the side or a few slices of cucumber.
