Substitutions

• 500 grams rye flour
• 300 milliliters warm water
• 150 grams rye sourdough starter
• 1 tea spoon salt

• Starter: use yeast, but flavor will differ.
• Flour: mix rye with wheat flour.

Allergens

Gluten (rye flour)

1. In a bowl, mix rye flour, sourdough starter, warm water, and salt.
2. Stir until smooth. Cover and let rise 12–18 hours.
3. Transfer to a greased loaf pan. Let rest 1 hour.
4. Bake at 200°C for 40–45 minutes.
