Ingredients

Substitutions

• 500 grams pork shoulder, diced
• 2 carrots, sliced
• 2 potatoes, diced
• 1 onion, chopped
• 2 table spoons oil
• 500 milliliters stock (vegetable or light chicken)
• 1 bay leaf
• Salt and black pepper
• A handful of fresh parsley

• Pork shoulder: beef stew meat or chicken thighs.
• Stock: water with a pinch of bouillon.
• Parsley: dill.

1. Heat oil in a heavy pot. Add pork cubes and brown on all sides. Remove to a plate.
2. In the same pot, add onion and cook until soft. Add carrots and potatoes, stir for 3 minutes.
3. Return pork to the pot. Pour in stock to just cover. Add bay leaf.
4. Bring to a boil, then lower heat. Cover and simmer gently for 40–45 minutes until pork is tender.
5. Season with salt and black pepper. Remove bay leaf.
6. Sprinkle parsley on top before serving.
