Substitutions

• 250 milliliters fruit juice (cherry, raspberry, or blackcurrant)
• 2 table spoons sugar (optional, if juice is sweetened)
• 1 table spoon potato starch
• 50 milliliters cold water

• Potato starch: corn starch.
• Juice: any berry juice or even apple juice.

1. In a small cup, mix potato starch with cold water until smooth.
2. Bring juice and sugar to a boil in a saucepan.
3. Slowly pour in starch mixture, stirring constantly until thickened.
4. Remove from heat and cool slightly.
