Ingredients

Substitutions

• 600 grams potatoes, peeled and diced small
• 1 carrot, diced small
• 1.2 liters vegetable stock
• 100 milliliters cream or milk (optional)
• A big handful of fresh dill, chopped
• 1 table spoon butter
• Salt and black pepper

• Butter: oil.
• Cream or milk: leave out for a lighter soup, or use plant milk.

Allergens

Dairy (butter, cream or milk if used)

1. In a pot, bring stock to a boil. Add potatoes and carrot. Cook until tender, about 15 minutes.
2. Stir in butter and cream or milk if using. Simmer 2 minutes.
3. Add most of the dill, season with salt and black pepper.
4. Serve with the rest of the dill on top.

Serving tip

A slice of rye bread on the side is lovely.
