Ingredients

Substitutions

• 150 grams chicken breast
• 70 grams buckwheat groats
• 200 grams cooked beets (boiled or baked)
• 1 small onion
• 1 table spoon oil
• 1 tea spoon butter
• Salt and black pepper
• Fresh parsley

• Buckwheat: rice or barley.
• Beets: carrots or roasted pumpkin.
• Butter: oil.

Dairy (butter)

1. Rinse buckwheat, place in a pot with twice as much water (about 150 ml). Add a pinch of salt. Bring to a boil, cover, and simmer 15 minutes until tender.
2. Slice onion and beets. Fry onion in oil until soft, add beets, cook 5 minutes. Season with salt and black pepper.
3. Flatten chicken breast slightly. Season with salt and black pepper.
4. Heat butter in a pan and cook chicken on medium heat, about 4–5 minutes each side until golden and cooked through.
5. Serve chicken with buckwheat and warm beet mixture.
