Substitutions
• 500 grams carrots, sliced
• 1 large leek, white part only, sliced
• 1.2 liters vegetable stock
• 1 table spoon butter or oil
• Salt and black pepper
• A small bunch parsley, chopped
• Butter: oil.
• Leek: onion.
Allergens
Dairy (butter), if used
1. In a pot, melt butter (or heat oil). Add leek and cook on medium until soft.
2. Add carrots and stock. Bring to a boil, then simmer 15–20 minutes until tender.
3. Blend the soup smooth or leave it chunky. Season with salt and black pepper.
4. Add parsley on top.
