Ingredients
Substitutions
• 500 grams sauerkraut
• 300 grams fresh white cabbage
• 300 grams pork shoulder
• 200 grams smoked sausage
• 1 onion
• 2 table spoons oil
• 3 dried plums
• 2 bay leaves
• 500 milliliters stock
• Salt and black pepper
• Pork: beef or game meat.
• Add mushrooms for richer flavor.
• Prunes: dried apples or pears.

1. Chop fresh cabbage, rinse sauerkraut if too sour.
2. Dice pork and sausage, chop onion.
3. In a large pot, fry onion and meat in oil until browned.
4. Add cabbage, sauerkraut, prunes, bay leaves, and stock.
5. Simmer gently for 2 hours, stirring sometimes. Add more stock if needed.
6. Season with salt and black pepper.
