Substitutions
• 500 grams raw beets, peeled and chopped
• 1 liter water
• 1 tea spoon salt
• Optional: 2 cloves garlic, a few peppercorns
• Add rye bread crusts for a deeper flavor (traditional).

1. Place chopped beets into a clean glass jar.
2. Add salt, garlic, and pepper if using.
3. Pour water over until beets are covered.
4. Cover the jar with a clean cloth and leave at room temperature for 3 days.
5. Strain into bottles and refrigerate.
