Substitutions
• 300 grams sauerkraut
• 200 grams potatoes, diced
• 1 carrot, diced
• 1 onion, chopped
• 2 table spoons oil
• 1 liter stock (vegetable or pork)
• 1 bay leaf
• 3 peppercorns
• Salt and black pepper
• Stock: plain water with bouillon.
• Oil: lard for richer flavor.

1. Rinse sauerkraut briefly if very sour, chop finely.
2. Fry onion and carrot in oil until soft.
3. Add sauerkraut, potatoes, stock, bay leaf, and peppercorns.
4. Simmer 40 minutes until vegetables are tender.
5. Season with salt and black pepper.
