Substitutions
• 2 medium beets, boiled or baked, grated
• 500 milliliters kefir
• 1 cucumber, diced
• 2 radishes, sliced
• 2 boiled eggs, halved
• A handful of dill, chopped
• Salt and black pepper
• Kefir: natural yogurt or buttermilk.
• Egg: omit for lighter version.
Allergens

1. Grate cooked beets. Mix with kefir in a large bowl.
2. Add cucumber, radishes, dill, salt, and black pepper.
3. Chill in the refrigerator for at least 1 hour.
4. Serve cold with boiled egg halves.
