Ingredients
Substitutions
• 500 grams chicken pieces (with bone)
• 2 carrots
• 1 parsley root or parsnip
• 1 leek
• 1 onion (halved, charred on open flame)
• 2 liters cold water
• 2 bay leaves
• Salt and black pepper
• Thin egg noodles
• Chicken: turkey or beef bones.
• Noodles: rice noodles or gluten-free pasta.
Allergens
Egg (noodles), Gluten (noodles, unless gluten-free)
1. Place chicken pieces in a large pot with cold water. Bring slowly to a simmer, skimming foam.
2. Add carrots, parsnip, leek, charred onion, and bay leaves. Simmer on low for 1.5–2 hours.
3. Strain broth, season with salt and black pepper.
4. Cook noodles separately, then serve broth poured over noodles.
