Ingredients

Substitutions

• 4 thin slices of beef (about 150 g each, rump or topside)
• 100 grams smoked bacon, diced
• 1 onion, finely chopped
• 100 grams mushrooms, chopped
• 2 pickles, cut into strips
• 2 table spoons mustard
• 2 table spoons oil or lard
• 500 milliliters beef stock
• 1 bay leaf
• 3 peppercorns
• Salt and black pepper

• Bacon: ham or smoked sausage.
• Mushrooms: dried porcini for deeper flavor.
• Beef: turkey or pork steaks (lighter but similar).

1. Pound beef slices thin. Season with salt and black pepper.
2. Spread each slice with mustard. Place bacon, onion, mushrooms, and a strip of pickle in the center.
3. Roll tightly and secure with toothpicks or kitchen string.
4. Heat oil in a pot, sear rolls on all sides until browned.
5. Add any remaining onion and mushrooms, fry lightly.
6. Pour in beef stock, add bay leaf and peppercorns. Cover and simmer gently 1.5–2 hours until tender.
7. Remove rolls and thicken the sauce slightly if desired.

Serving tip

Serve with buckwheat groats, mashed potatoes, or bread dumplings.
